Dark & Fudgey White Chocolate Chip Cookies

A couple years ago when I made Kylee and Jayce a castle cake, I bought LOTS of white chocolate chips to melt and cover the ice cream cones to make the pillars of the castle. Well, I bought way too much white chocolate and found this recipe to use my white chocolate. These cookies are a delicious fudgy cookie with white chocolate!!

1/3 cup flour
1/4 t baking powder
6 oz. unsweetened chocolate
4 T. butter
2 extra-large eggs
1 1/3 cups sugar
1/8 t salt
1 t vanilla
3/4 cup white chocolate chips

Melt chocolate and butter over a double boiler. When the chocolate is melted, remove the bowl from the heat and set it aside to cool. Preheat your oven to 350. Line 2 sheet pans with parchment paper and set aside. Put the flour and baking powder in a small bowl. Whisk the mixture together to combine well. Mix the sugar and eggs. Toss in the salt and vanilla. Beat on medium-high for about 11-13 minutes. Add the melted chocolate/butter and beat on medium-high for 2-3 minutes. Fold flour into the chocolate. Toss in the white chocolate chips. Bake at 350 degrees for 10-12 minutes.
