I saw these cupcakes on Real Mom Kitchen. I knew I just had to try them since strawberries were on sale a couple weeks ago. This is the frosting that I used on the cupcakes for Sunday. I wish that I had added more powdered sugar to the frosting. It wasn't the right consistency for frosting, but they still were delish!!
Strawberry Cake
1 white cake
1 3 oz box strawberry jello
2/3 cup oil
1/2 cup frozen strawberries, with juice, thawed
1/2 cup water
4 eggs
Mix all ingredients on low for 30 seconds, high for 2 minutes. Put into cupcake pan and bake at 350 for 20-22 minutes.
Strawberry Frosting
1 1/2 cups butter (3 sticks!)
3 cup powdered sugar
2/3 cup frozen strawberries, with juice, thawed
Puree strawberries. Beat butter until smooth, add strawberries. While mixer is on low, add powdered sugar. Frost cupcakes and Eat (or just grab a spoon and dig in)!!!!
