Cinnamon Rolls

I think I have way too many cinnamon roll recipes, but I just LOVE all of them and I think I make a different one each time!!


1 1/2 Tbsp SAF instant yeast
½ cup warm water
1 1/2 cups milk, warmed
2 eggs
½ cup sugar
½ cup oil
2 tsp salt
1 tsp vanilla
dash of nutmeg (optional)
5-6 cups flour

Mix all ingredients with half of the flour till smooth. Add enough remaining flour to make a dough that is soft and slightly sticky. Knead for about 3-5. On a lightly oiled counter top, roll dough out into a rectangle. Spread the butter over the dough, and sprinkle liberally with cinnamon sugar mixture. Roll the dough up lengthwise, and pinch the seam together to seal. Cut into slices using a piece of dental floss. Place rolls on a greased jelly roll pan or cookie sheet and let rise till doubled, about 30-45 minutes. Bake at 350 for about 20-25 minutes or till lightly browned. Frost while still warm.

Frosting

2 Tbsp butter, melted
2-3 Tbsp milk
pinch of salt
1 tsp maple flavoring
2-3 cups powdered sugar

Whisk all ingredients till smooth. Spread on warm rolls.
