5 large ripe peaches
1 cup sugar
3 T corn starch
½ cup water
2 T butter
1 pre-baked 8 inch pie shell
Peel and slice 3 of the large peaches and place them into a cooked 8 inch pie shell. Peel, slice and mash the other 2 large peaches and place them into a medium saucepan. Add the sugar and mix. Combine the corn starch and water in a separate bowl and then add to the saucepan. Combine well over medium heat and cook for about 5 minutes until it boils and thickens. Remove from heat and add the butter. Mix well and pour over fresh peaches in pie shell. Place pie in the fridge until completely chilled. Serve with whipped cream.
