Coconut Red Curry Chicken


2 cans light coconut milk

1.25 lbs chicken

1 tbsp sesame oil

1 tbsp avocado oil

2 tbsp garlic

½ tbsps ginger

2 oz red curry paste

1 onion

1.5 cups sliced carrots

1 sliced pepper

3 cups broccoli


In a pan, add oil, garlic, ginger, onions, broccoli, red pepper, carrots.  Cooked until soft.  Add curry paste.  In a separate pot add oil and chicken.  Once the chicken is cooked, add the pan of veggies.  Pourin coconut milk and simmer together 5-10 minutes.
