Pumpkin Waffles
2 cups flour
2 tbsps baking powder
1 tbsp cinnamon
1 tbsp sugar
½ tsp nutmeg
1/4 tsp salt
4 eggs, separated
1 ½ cups milk
1 cup pumpkin
3/4 cup butter, softened
1 tbsp vanilla
Combine flour, baking powder, cinnamon, sugar, nutmeg, and salt. Set aside. Beat 4 egg yolks slightly and add milk, pumpkin, butter, and vanilla. Add to flour mixture. Beat 3 egg whites to stiff peaks and fold into pumpkin mixture. Cook according to waffle iron. Serve with Buttermilk Syrup.
Buttermilk Syrup
½ cup butter
1 cup sugar
½ cup buttermilk
1 tsp karo
1 tsp baking soda
1 tsp vanilla
Bring butter, sugar, buttermilk, and karo to a boil in a large pan. Remove from heat and stir. Add soda and vanilla. Mixture will fizz to twice the size. Let set, stirring occasionally. Serve while hot.
