Quick Raisin Cookies

2 cups shortening
1 cup brown sugar
2 tbsps milk
2 tbsps vanilla
2 cups white sugar
4 eggs
3 tsps soda
7 cups flour

Filling

2 ½ cups raisins
2 ½ - 3 cups water
1 cup sugar
2 tsps vanilla
2-3 tbsps flour or cornstarch

Cream sugar, shortening, and eggs. Blend well. Add milk, vanilla, flour, and soda. Shape into rolls 2x15 inches long. Wrap in wax paper and chill or freeze. Slice 1/8 to 1/4 inch slices. Pace filling, about 1 tsp, on each slice and lay another on top; don’t press down. Bake at 350 for 15 minutes.

Filling: Add water to raisins and boil about 5 minutes. Add remaining ingredients; combine and stir until thickened. Cool.
