Pumpkin Pancakes

This morning, we had pancakes! I had some leftover pumpkin that I needed to use and thought it would be good in some pancakes. My kids can always use more veggies in their diet! I found this recipe and it turned out really good. I like to double or triple the recipes to save some for later. I put them in baggies and then we eat them throughout the week.

1 cup all-purpose flour
1/4 cup packed brown sugar
1 1/2 tsp baking powder
1/4 tsp salt
1/2 tsp cinnamon
1/2 tsp ginger
1/4 tsp nutmeg
1 egg
1 tbsp canola oil
1 cup milk
1/3 cup pumpkin

Mix together, flour, brown sugar, baking powder, salt, cinnamon, ginger, and nutmeg. In a separate bowl, mix together egg, oil, milk, and pumpkin. Add wet ingredients to dry ingredients. Stir until combined. Cook on grill.
