This is a recipe I got from my Low on the Go recipe book. It is really good. I know the ingredients may sound very interesting, but it is a good one.
1 lb ground beef
1 T dried onion
1 t garlic
1 can pinto beans, drained
2 can tomato sauce
2 cup cottage cheese
1 cup sour cream
1 can green chilies
1 cup cheddar cheese
1 pkg tortilla chips
Spray pan with cooking spray. Cook meat. Add onion, garlic, beans, and tomato sauce. Combine cottage cheese, sour cream, and chilies. Crush tortilla chips in bottom of pan. Layer the meat on top of chips. Follow with cheese mixture and top with grated cheese. Bake covered at 350 for 20 minutes uncovered for 10 minutes.
