Favorite Pancakes

This is my most favorite pancake recipe. This is the only one I make. I usually with quadruple the recipe and then freeze all the leftovers and pull them out throughout the week. These pancakes have such a buttery light taste. I just love them. They almost melt in your mouth when you eat them.

1 egg
1 cup buttermilk (or 1 T vinegar and enough milk to make 1 cup, let sit 5 minutes)
2 T butter, melted
1 cup flour
½ t salt
1 T sugar
1 t baking powder
½ t soda

Beat egg, then add in buttermilk, shortening, flour, sugar, baking powder, soda, and salt.
