I have zucchini and yellow squash in my garden in the summer time just for this recipe. I LOVE this and crave it every winter!! I first had this when I was single and my roommate made it for dinner one night. I didn't like zucchini or any sort of squash. I had one little taste and then proceeded to eat the whole dish! I LOVE this. You can use any veggies you want, onions, carrots, squash, whatever suits your fancy.
3 cups cooked chicken, diced
1 cup shredded carrots
1 can cream of chicken soup
1 cup sour cream
1 box Stove Top
½ cup butter, melted
salt and pepper to taste
Cook squash and onions for 3 minutes. Add carrots, cook 2 more minutes. Drain. Combine soup and sour cream. Add squash and chicken and put in 9x13. Combine stuffing and butter. Top squash and chicken with stuffing. Bake at 350 for 20-30 minutes.
